The restaurant's dining room, draped in Italian Dedar curtains and decorated with a large period fireplace, features large bay windows looking out on the hotel's fragrant garden. Weather permitting, several terraces, surrounded by jasmine or wisteria, provide a lovely, flower-perfumed setting.
The Chef Fabien Fage is passionate about creating food into art. His career path took him from Alain Passard to Alain Ducasse, with Bernard Loiseau, the Meurice and the Ritz along the way. His menu honours Mediterranean and Provençal flavours and sources ingredients from the local producers of the Languedoc-Roussillon area. In 2010, his talent was rewarded by a Michelin star. He loves light, airy dishes, that he accompanies with sauces that are precise and well-studied.
The cuisine of Le Prieuré is a delight for the tastebuds and Boris Laurent, the Chef Sommelier, marries it to perfection with wines from the Rhone Valley, without forgetting fine Burgundies, Bordeaux and Champagnes.
