Flooded with morning light and overlooking sea views that spill in through generous windows, Latitudes is the perfect place to start to your day.

The lavish spread laid out by the chef includes cooked-to-order eggs and a champagne American breakfast buffet, with freshly baked breads, buttery croissants and cereals (catering to those with the most hedonistic tastes as well as those with gluten-free requirements), pressed juices, fruit, nuts, charcuterie and salmon. This is complemented by the traditional buffet of local delicacies such as stuffed vine leaves (dolmades), Greek yoghurt with island honey, fresh tomatoes and cured olives as well as the more indulgent halva, kataifi and baklava.

It’s so good that guests who only drifted in at dawn get up just in time to catch the last delicious Italian cappuccino.

This restaurant is sheltered from the evening breeze in an alcove of rough-hewn stone. In tribute to the guiding philosophy, Efisia is named after the Greek word physis (φύσις), the philosophical term for 'nature'. As one of the top tables on the island, Efisia offers a gourmet menu in the Relais & Châteaux tradition, pairing a culinary experience with luxurious atmosphere.

The executive chef Ilias Maslaris is passionate about infusing classics with regional flavours and reveres the process of using seasonal organic produce to create world-class cuisine. He is dedicated to preserving the purity of his ingredients, creating subtle and at times surprising combinations. His current recommendations at the Efisia are the poached lobster in a bisque of shrimp, fresh garden vegetables and artichoke hearts, as well as the lamb cutlets with a demi-glacé reduction and smoked eggplant.

Both à la carte options and a menu dégustation are complemented by a discerning selection of wines. Bookings are essential!

George’s Bar is named after patriarch George Daktylides, who laid the first stone to the Myconian Collection in 1979 and remained at the helm as CEO until he retired in 2010, handing over a hospitality empire to his four sons. You may spot him at the bar on rare occasions, lifting his glass to his wife Eleftheria without whom none of it would have been possible. And you may also find his mischievous namesake George, son of the Ambassador’s owner, teasing his grandfather with the claim that the bar was in fact named after him.

With its panoramic view of the entertainment terrace, George’s Bar is an ideal meeting spot and a perfect vantage point from which to watch the day’s rhythms unfold. The barman is an old hand at preparing your poison of choice, and you can rely on him to provide the perfect accompanying snacks.

Light lunches are served (from 12pm to 8pm) in the bar lounge or at your shaded lounger overlooking the Aegean. Eleni Malakou is a physical therapist specialized in PNF, Mulligan and Bobath, a Yoga instructor as well as an instructor in anatomy and kinesiology.

Holistic Wellness Coaching approaches each person both individually and holistically, helping them to balance the three dimensions of body-mind-soul, as well as within the living environment.

POOL & BEACH

The magnificent timber deck surrounding the pool is a world unto itself. It’s a vast expanse and, once on it, you feel as if you’ve set out to sea on a tide that ebbs and flows from breakfast terrace to poolside bar and back. Best of all though are the seamless views out over the Aegean.

You could do nothing at all. Or why not simply watch the shadows of the palms and the parasols lean into the afternoon until, at sunset, stillness descends on the ocean, bringing with it an incomparable sense of tranquillity and wellbeing. PLATIS GIALOS

The beach below the hotel is as beloved for its fine sand and crystal water, as for its little boutiques and quaint restaurants that line the boardwalk. Watersports organisers on Platis Gialos offer jet-ski rental, instruction in wakeboarding, surfing, skating or waterskiing, tube-sofa and banana-boat rides, canoeing and snorkeling. Glass-bottom boat rides and private yacht charters can be booked to depart from the jetty. The beaches of glamorous Psarou, Paranga and Agia Anna are a short stroll away on either side, as is the promontory that ultra-cool Scorpios has colonised.

DELOS & RHENIA DISCOVERY
Delos is a mythological birthplace of the twin gods Apollo and Artemi, which is is today a UNESCO World Heritage Site. Evidence of habitation dates back to the 3rd millennium BC on this little island which was a very important religious centre from the 9th Century BC and for almost one thousand years. From 478 BC, it hosted the treasury of the Delian League before it was removed to the Acropolis in Athens and Delos turned into a thriving port of world trade from the 4th Century BC onwards. A museum among the ruins of the ancient city contains the most important artefacts unearthed during ongoing excavations.

Leaving the Ambassador at noon, you will swim and snorkel around Rhenia and enjoy a grilled on-board barbeque lunch before heading to Delos around 5:30pm, a time of day at which few visitors choose to visit the island. Walk through the ancient city in the company of a certified private guide as the sun sets over its marble ruins. And on your return to Platys Gialos (or Mykonos Town if you choose) around 8pm with champagne in hand, just when you thought it couldn’t get more magical, Chora will light up its glittering night mantle.

FLYING HIGH
Take to the skies by helicopter ride and survey the amazing blue expanse of the Aegean Sea and the neighbouring Cycladic islands.

Fly over the island baked by the sun and dotted with whitewashed houses, out across to Delos and Rhenia and then towards Tinos, Paros and Naxos which each have their own character although they are only a few nautical miles from one another.

In a little under an hour, you will have seen the islands like a bird, from a perspective to which not even the locals are privy.

SCUBA DIVING
The crystal waters of Mykonos offer many opportunities for diving and snorkelling, including two shipwrecks and a rich variety of marine life.

Visibility is fantastic and sites are adapted to weather conditions and diver experience. For experienced divers, there is the option of Night Diving, NITROX-enriched air and Deep Diving Adventure and Specialities.

The highlights, among many others are: Paradise Reef at a depth of 2-30m; Paradise Point’s dramatic topography at depths ranging from 10-30m, with swim-throughs and steep drop-offs, as well as interesting ancient artefacts; the Anna II Wreck, a large cement carrier which sunk to a depth between 18-35m in July 1995 and is accessible only to divers certified to PADI Advanced Open Water; the desert island of Dragonisi, located a 40-minute boat ride to the south-east of Mykonos and which boasts spectacular rocks formations and caverns whose walls are covered with small yellow anemones, a great dive site with a depth of 3-30m for underwater photography enthusiasts. Commonly encountered marine life includes octopus, wrasse, barracuda, bream, groupers, moray eels, lobster, nudibranchs, starfish, sponges and anemones among others.

WATER SPORTS
