Sébastien Clémente is the Chef Concierge at Château Saint-Martin & Spa, a luxury hotel in Provence-Alpes-Côte d'Azur.
Sébastien, what was the most unique request you received from your guests?
Once honeymooners came to Château Saint Martin & Spa. When they saw our Chappelle in the property, they asked to have a private office after their massage at the Spa. I personally went to the cathedral of Vence with my scooter and asked a priest to come to Château Saint Martin & Spa.
What do you love most about the area of Vence?
The old town of Vence with the typical French village way of life: small market every day, tiny pedestrian streets and Matisse’s Chappelle.
What is the most in-demand experience that your guests ask for a lot?
Our guests come in Vence to discover the culture of the art. Indeed, Matisse or Chagall used to live in the area. I’d like to recommend our guests to visit the Maeght Foundation in Saint-Paul-de-Vence, which is a unique site dedicated to modern art.
Can you tell us where and when the best markets in the area can be found?
I think the Provençal market located in the old town of Antibes is one of the best in the area. It is open every day in a warm atmosphere from 06:00 until 13:00. In this place, you can find fruits, vegetables and flowers. There are also local foods as la Socca, olive oil and all the Mediterranean spices. It is also nice to have a walk around Antibes, which is one of the most beautiful towns in the French Riviera.
Please, share with us your favourite dish from the hotel's kitchen?
My favorite dish from Le Saint Martin is the lamb: saddle in rosemary, aubergine en papillote and courgette spaghetti. I really like Mediterranean dishes and the flavours of the southern products.
