Salvatore Ferragamo Talking About Wine, His Favourite Tuscan Dish And Il Borro

Today we are talking to Salvatore Ferragamo, the Assistant Director of Il Borro, an exclusive 5-star retreat, beautifully located in Tuscany. Together with his father Ferruccio Ferragamo, who is the Owner of the property, Salvatore ensures that all their guests enjoy the best and most authentic experiences this trully charming Italian region can offer. 

Salvatore, please could you tell us why your family decided to open the hotel in the countryside of Tuscany?

My father Ferruccio was born in Tuscany and many members of my family still live around here. Tuscany is also one of the first names that come to mind among the regions when talking about Italian wine and for this reason my father decided to create Il Borro, purchasing it in 1993 and deciding to invest in an area with unexpressed potential at that time. But it was not only a business strategy: my family and I are in love with this stunning piece of Italy so much that we actually spend our holidays at Il Borro.

What are the most unique experiences that Il Borro offers for the guests?

I feel Il Borro is a hidden gem!! It’s in the heart of Tuscany at the foothills of the Apennine mountains range just 45 south of Florence. The Borro provides for a truly authentic experience both in terms of the wines and the different agricultural products we produce on the estate but also for our hospitality activity in the medieval village and Aie del Borro that have been transformed into a 5 star Relais & Chateaux scattered hotel. At the heart of the entire restoration project, started in 1993, was a desire to bring the estate back to life, preserving its traditions and history while at the same time making those improvements that made Il Borro a place like no other where sounds of the Tuscan countryside fill the air – dogs barking, the rustling of the trees and the steady noise of the cicadas.   

Could you please tell us more about the wines that you produce on the estate?

The first vintage was the Il Borro wine 1999 and many other wines came after that.  All our wines are produced and certified organically since 2015 with a unique concept of Terroir where we select the different vines according with the different soils we have on the property. World-class wines using local Sangiovese is one of our peculiarities, we also produce great wines with Syrah, and blends with Cabernet Sauvignon and Merlot as well.   

In our vineyards, we produce all the organic matter necessary for the natural fertilization of the vines, therefore, embracing the self-sustainable concept of autarkic biology. In doing so, we can define the organic mission of Il Borro as a continuous pursuit of balance between human, nature and territory. 

Where, outside Italy, do you usually like to travel?

I enjoy travelling to Portugal, I enjoy the people, I like the food and they have greatly improved the quality of their wines not to mention the port wines that I particularly enjoy. Also a great family vacation since my wife, our three kids and I enjoy surfing. 

What is your personal favourite Tuscan dish?

Florentine steak. Less tender than US prime beef, but with great flavour.
