Unique culinary experiences
The Kitchen Team of Waldorf Astoria Amsterdam is led by the Two Michelin Star Chef, Sidney Schutte. He developed a gastronomic vision in which the distinctive philosophy, qualities and values of Waldorf Astoria merge with his years of international experience as a Chef at the highest level. He is praised for his own identity, balanced flavour combinations, the mix of local products and influences from modern world cuisine and his creative vegetarian dishes.

The restaurant, named by that time Librije’s Zusje, received two Michelin stars seven months after opening in 2014. Since January 2019, the two-star restaurant has its new name, Spectrum. The restaurant is a clear reflection of the gastronomic and hospitality vision of the Chef. The name does justice to the variety of ingredients, flavours, creative recipes and experience of hospitality. The atmosphere in the stylish, modern restaurant contributes to an overwhelming total experience. Spectrum continues the excellent reputation of Librije's Zusje, maintaining their two-Michelin stars and receiving 18.5 points in the top regions of the 2019 Gault Millaut guide, of which Sidney Schutte was also named Lead Chef of the Year in 2017.
