Nobuyuki Matsuhisa – known to the world simply as "Nobu" – is the acclaimed and highly influential chef proprietor of Nobu and Matsuhisa restaurants located across five continents. One of his latest restaurants can be found at the newly opened Nobu Hotel Ibiza Bay on the island of Ibiza, Spain.
Nobu, can you tell us how you decided to become a Chef?
When I was a young boy growing up in Japan my eldest brother took me to a sushi restaurant. I was spellbound form the moment I walked in by the smell of fresh fish, the fragrance of vinegar rice, the swift and graceful movements of the chef, the exchange between the sushi bar chef and the guest. Seeing the guest delighted with each piece of sushi made especially for them. I knew right then and there I wanted to become a sushi chef.
What is your secret to a perfect sushi?
A good sharp knife, the freshest fish and good quality rice.
What inspires you most in life?
My family, seeing my guests happy and leaving my restaurants with a smile and my Nobu family. At all of my restaurants we have the best teams. We promote from within and nothing gives me greater joy than to see an ambitious young chef, server, or manager working hard and taking pride in what they do. This inspires me. To always want to be a good teacher and leader for them.
What do you like most about the island of Ibiza?
I like everything! Ibiza is a very beautiful island. The food is good, the people are welcoming and the sunsets are amazing!
What is your favourite holiday destination?
I travel 10 months out of the year. So, when I take a holiday, I just want to relax and unwind. I have a house in Hakone in Japan. It is very relaxing, there are natural springs and beautiful nature. This is my favourite place to spend a holiday.
